They gather every sms received in a given timeframe, validate them (answer “yo” instead of “no” is not accepted, for example), and count all valid answers. After this point it’s only math to find out who won.
Note: billing is another question, out of the scope of this question.

There is some deal set up with between the show and the phone companies.
The PCs recieve the SMSs, and tally the votes with software after they are validated. This info is passed on to the show which then sums up between PCs (if there are more than one) and a result is delivered either during or after the show.
